The light and fluffy kuih bahulu is a Chinese New Year staple but madeleines are pretty much the modern version of it. Sure, nothing can replace the original kuih bahulu but you should try madeleines too before giving your verdict.

Madeleines are a French pastry traditionally made from the usual cake ingredients like eggs, butter, sugar and baking powder. The trick lies in perfecting the technique of making the madeleines itself and for this, a specific madeleine tray is required.
